All of the materials, and there are many others, have their place in outdoor clothing.
Gore-tex is a very thin porous plastic film laminated to a nylon or polyester fabric, and sometimes laminated on the other side to a lining material. It is waterproof like ordinary coated nylon or rubber, but it breathes enough that your sweat generally won't condense on the inside. Polypropylene is not extremely strong or abrasion resistant, but it has the useful property of not absorbing water, but rather wicking it away from the skin. Polypro has the disadvantage of retaining odors, including body odors. It also melts easily, so it generally has to be air-dried. Wool is very old school, and not much used any more. It is warm, but it is also relatively heavy for the warmth it provides. It was largely used for insulating layers like sweaters. For insulation purposes, it has been largely replaced with special polyester fleece like Polarguard, or by lofting insulation like goose down, Holofil, Primaloft and others. Fleece is just as warm but lighter, and it doesn't absorb water and breathes better. The lofting insulation is even lighter and warmer, but doesn't breathe as well, and is bulkier. But wool is still quite durable and abrasion resistant, making it suited for socks and some work clothing. It also has the unique ability to provide warmth even when it is wet.

Even when a piece of clothing isn't all nylon, it is often added to make the clothing stronger. You often find it mixed with wool in socks, for example. Nylon also dries quite quickly.
And even cotton has a place in outdoor clothing. So there is no one good fabric for outdoor wear. Most people walk around in a mixture of mostly nylon and polyester in various forms, with a bit of wool and polypro and sometimes cotton or silk thrown in.

There is something relatively new called soft-shells. They are jackets made out of knit or woven fabrics, laminated with fleece or a gore-tex-like film, or both. They are meant to serve as all purpose outerwear, providing wind protection, and varying degrees of insulation and waterproofness. They don't do any of those things very well, but the idea is with a soft-shell and a good weather forecast, you might get away with not carrying around a raincoat. They tend to fit closely to the body; you would wear just light underwear underneath. They stretch, for comfort. But they aren't extremely light. But anyway, they are the latest trend nowadays.
